Step One
Store potatoes in a cool dark place. Best kept at a temperature of 45 to 48 degrees F.
Step Two
Each potato is washed and scrubbed with a brush to remove any dirt or sand, especially around the shallow eyes that easily trap the dirt.
Step Three
Then place potatoes in a sink with water and cover them. One by one place potatoes one by one in the cutter.
Step Four
Place the now cut potatoes in a strainer to drain and rinse with clean water.
Step Five
Lastly, we add a small quantity of white wine vinegar or lemon juice to keep the potatoes from turning gray or pink after cutting.
